Breakfast tacos are a quick and flavorful dish that’s ready in less than 20 minutes. You can also customize them with your favorite toppings. This recipe is meat-free but if you desire add some bacon, sausage or chorizo to the filling. Breakfast tacos are good for any meal of the day and the recipe can be multiplied to feed a crowd. Enjoy!
Makes 1 serving
2 eggs, scrambled
2 Tablespoons shredded cheese
2 Tablespoons salsa
¼ cup canned black beans, drained and rinsed
2 small or 1 medium tortilla
Optional: dollop of sour cream or plain green yogurt, sliced pickled jalapenos, avocado, or baby spinach leaves
Wash hands for at least 20 seconds with warm water and soap.
Assemble and prepare ingredients.
