Mexican Style Shredded Beef

 

As fall approaches, our thoughts turn toward hearty slow cooked meals! What could be better than a make-ahead meal from the slow cooker that can actually be used in many different recipes? Mexican Style Shredded Beef is just that, a recipe that can be used in everything from tacos, burritos, enchiladas or soup. This recipe is super versatile; it can be made in large batches for a crowd of frozen for later use.

 

Mexican Style Shredded Beef

Serves: 12

Ingredients:

1 round roast (approximately 4#’s)

1/2 teaspoon salt, or to taste

1 teaspoon pepper, or to taste

1 tablespoon chili powder

2 teaspoons cumin

1 teaspoon garlic powder

1 teaspoon cayenne pepper

2, 4oz. cans diced green chilies

5-8 oz. taco sauce

 

Directions:

  1. Combine salt, pepper, chili powder, cumin, garlic powder and cayenne pepper in a small bowl. Mix well and rub mixture into both sides of the roast. Place the roast in a slow cooker. Sprinkle with diced green chilies. Pour taco sauce over roast. Add water to a depth of 1/3 the thickness of the roast.
  2. Cover and cook on low for 8-10 hours.
  3. Use the beef for fajitas, tacos, burritos, enchiladas and more!
