Sweet and Smoky Popcorn with Almonds
INGREDIENTS:
1 tablespoon vegetable oil
½ cup popcorn kernels
1/3 cup granulated sugar
1/2 teaspoon smoked paprika
1/4 teaspoon chipotle powder
½ teaspoon sea salt
1 cup roasted almonds (can use salted or unsalted)
PREPARATION:
- In a small mixing bowl, combine smoked paprika, chipotle powder, and salt. Stir and set aside.
- Heat a large pot, or stovetop popcorn popper, over medium-high heat, add the oil and a few kernels of popcorn. When the kernels pop, add the remaining popcorn and sprinkle the sugar over it. Shake the pot often to prevent the sugar from burning. When the popping slows down, immediately remove popcorn from heat and pour into a large serving bowl.
- Add the almonds to the popcorn. Evenly sprinkle the reserved spice mix over the popcorn and almonds, stirring with a spoon to combine. Allow the popcorn to cool, stirring once more to assure almonds are mixed in evenly. Enjoy immediately or store in an airtight container for future snacking.
